Ingredients
8 oz shredded chicken
1/2 cup Good Culture cottage cheese
1/4 cup Primal Kitchen buffalo sauce
1/2-1 oz cheddar cheese
Side choice examples; sweet potatoes, carrots, celery, cucumbers, rice cakes
Preparation
Make your chicken in a crockpot in advance, or buy pre-shredded rotisserie chicken, or use canned chicken (I cooked an entire pack of chicken in crockpot with 1 cup low sodium chicken broth on low for 8 hours, then shredded with forks)
If you want to bake, preheat oven to 350 and bake for 20 min. then broil until golden brown or can microwave for 1-2 minutes or until preferred consistency
When chicken is ready mix with cottage cheese and buffalo sauce, sprinkle cheese on top, then bake or microwave
Choose your sides for dipping, from sweet potatoes, to carrots, celery, cucumbers, rice cakes, etc.
