Ingredients
1 (15 oz.) can black-eyed peas, drained and rinsed or use 1 (15 oz. can) of garbanzo beans
1 (15 oz.) can black beans, drained and rinsed
2 whole avocados cut into one-inch pieces
1 (15 oz.) can of corn, regular or sweet, drained and rinsed
1 red onion, diced
1 (30 oz.) or 2 (15 oz.) can(s) of chopped tomatoes
1/2 cup diced green pepper
1/2 cup diced red bell pepper
1/2 cup olive oil
1/4 cup sugar (Stevia)
1/2 cup white wine vinegar
Couple shakes of chili powder
Couple shakes of pink Himalayan sea salt
1/2 cup chopped cilantro
Preparation
In a large bowl, whisk together the oil oil, sugar, white wine vinegar, chili powder, and salt.
Add tomatoes, black-eyed peas, beans, corn, red onion, bell peppers, and avocado. Stir to combine.
Stir in cilantro. Cover and chill for at least one hour or overnight to blend flavors. Serve chilled or room temperature.
Serve with tortilla chips or carrot chips.
