Ingredients

  • 4 medium-sized sweet potatoes

  • Crockpot Fiesta chicken

  • 1 cup black beans

  • 1 cup -% Fage Greek Yogurt

  • 1 cup shredded lettuce

  • 1 cup low fat shredded cheese

  • 1 cup black olives

  • 1 cup diced tomatoes

  • 1/2 cup jalapeños

  • 1/2 cup red onion

  • 4 tbsp hot sauce

  • Coconut oil or olive oil spray

  • Himalayan sea salt

  • Pepper

Preparation

  1. Preheat oven at 400 degrees 

  2. Slice sweet potatoes into medallions, grab a cooking pan, add tin foil on top and spray with coconut or olive oil spray. 

  3. Spread sweet potato slices on pan, spray with oil and then shake some salt and pepper on them. 

  4. Bake for 35-45 minutes depending on preferred softness/crispiness. Easy to split into four servings or store to re-heat and eat. 

  5. While potatoes are baking, get your pre-cooked crockpot Fiesta chicken ready. 

  6. Once sweet potatoes are done, portion out 4-ounce servings and decorate your "chips" however you'd like. 

  7. Top them off with 3-4 ounces protein, 1/4 cup black beans, 1/4 cup chopped tomatoes, 1 tbsp of 0% Greek yogurt, a small handful of black olives/jalapeños/purple onion, mixed lettuce and some hot sauce. ENJOY!
